Amish Friendship Loaf


Amish Friendship Loaf (or Bread) is a delicious sweet bread made from a sourdough "starter" that is often shared by friends. The starter contains a lactobacillus culture and is a substitute for baking yeast - it can be used to bake just about anything. As long as you "feed" your starter, it can be kept at room temperature indefinitely.

Day 1 - put 1 cup plain flour, 1 cup sugar and 1 cup milk into either a large jar with a plastic lid (do not use metal with the starter) or a large zip-lock plastic bag. Shake it about to mix. DO NOT REFRIGERATE.

Days 2, 3 & 4 - shake it about to mix.

Day 5 - add 1 cup plain flour, 1 cup sugar and 1 cup milk to the mix. Shake it about to mix.

Days 6, 7, 8 & 9 - shake it about to mix.

Day 10 - add 1 cup plain flour, 1 cup sugar and 1 cup milk to the mix. Shake it about to mix.

Take one-third of the mixture and bottle or bag it to keep as your next starter - the following day will be Day 1 and the cycle starts again.

Take half of the remaining mixture and bottle or bag it to give it away to a friend the following day. Make sure you tell them that it is Day 1.

To the remaining mixture, add the following:

2/3 cup oil
3 eggs
1/2 teaspoon salt
1 teaspoon vanilla essence
1 and a half teaspoons cinnamon
1 cup sugar
2 cups flour
1 and a quarter teaspoons baking powder
1/2 teaspoon baking soda

Using a fork, beat until well blended.

At this stage you can add 2 cups of chopped nuts, raisins, pineapple, dried fruit, cherries, chopped apples, coconut, chocolate chips, etc.

Grease 2 medium loaf pans with butter and sprinkle with sugar instead of flour.

Bake at 325F (160C) for 45 - 60 minutes or until a skewer comes out clean. Cool for 10 minutes before turning out onto a rack.

IMPAWTANT:

  • There are 1000s of flavour combinations to improve upon the original flavour.
  • Unused starter can be frozen/refrigerated to restart the cycle later.
  • The end product doesn't need to be a cake. For instance, unused batter makes delicious pikelets! Just add extra milk, 2 tbsp oil, an egg and plain flour to make a batter the consistency of heavy cream.
